However, for my absolute favourite evening dining experience it has to be Etsu at Mermaid Beach – the amazing range of dishes, the deep fried haloumi is to die for, the ever-changing specials and the freshness of the sashimi (or is it the range of Japanese whiskies?!). This restaurant is truly an asset to the Gold Coast.”

TURN YOUR HOLIDAY WINE INTO SOMETHING THAT LITTLE BIT MORE SPECIAL…
– 1 bottle of white or red wine
– 4 tbsp white sugar
– 60ml brandy
– 2 cups ginger ale
– orange wedges
– lemon wedges
– lime wedges
– fresh mint, to garnish
Add ice to a large pitcher. Pour in all sangria ingredients and stir. Garnish with mint before serving.
